Overview
Tortilla de patatas is a thick round "pie" made of eggs and vegetables, often with onions. Potatoes are cut into galvanized slices and fried in a large amount of olive oil until soft, but not until crisp. Then the potatoes are mixed with beaten eggs and onions (if used), and this mixture is poured into a frying pan and fried over low heat until it sets normally. After that, the tortilla is carefully turned over and fried on the other side. The ideal tortilla should be juicy on the inside and slightly toasted on the outside.
